A staple in our house is the rotisserie chickens you can buy in your local supermarket. I use them for everything from salads to tacos and more. They usually come in a variety of flavors and are absolutely delicious but it is kind of a pain to have to run out to get one when the urge strikes.

So, I played around a bit and was excited that I could cook a whole chicken in my air fryer and get that same crispy outside with such moist inside! While you can change out the flavors to make it your own, I opted for a lemon pepper flavor for this recipe because that is the one I love from our local store.

The flavor was the same, so if you don’t have an air fryer, you can make these in the oven. These cooked much quicker than they do in the oven. But the downside is it fits 3 at a time.

This leaner version of the popular restaurant appetizer skips the deep fryer in favor of the air fryer. Onion “petals” are dredged with seasoned flour—featuring an alluring hint of smoked paprika—coated with egg wash, and given a final dusting of a flour-cornmeal mixture before cooking to crispy perfection. You can use either a regular white or yellow onion, which will be more pungent, or a sweet onion (such as Vidalia or Walla Walla), which will taste mellow. The horseradish in the accompanying dipping sauce gives it some punch.

Mild, family-friendly tilapia fillets are slathered with herbed mayonnaise, dredged in instant potato flakes, and air-fried until crispy on the outside and perfectly flaky and moist inside. Be sure to choose fillets no larger than six ounces each; any larger, and you’ll probably be unable to fit two in the air fryer together. The potato flakes are a smart gluten-free breading option and a great pantry staple to keep on hand. Other than breading fish fillets as with this recipe, you can also use the flakes to bind meatballs or meatloaf or to thicken soups and sauces.

The dough gets a flavor boost with a little vanilla extract and cinnamon, then is shaped into long, skinny ropes that snake around each other to replicate the shape of a classic funnel cake. On a glorious and beautiful Sunday afternoon, we attended the bridal shower of literally Kc’s oldest friend.
