Zip-top bags are especially good for freezing food because you can more easily get all the air out of them than out of rigid containers. You can use them for everything from blanched spinach to chicken thighs and, after laying them flat to freeze, stack them to economize space.

Line your pan with heavy-duty aluminum foil. Leave extra foil hanging over all edges so that you can pull it completely over the top later. Place the food in the pan and then put the pan in the freezer, uncovered. When the casserole is frozen lift it out of the pan, using the foil wrap as handles.
